Hibernation season has arrived. With shorter days and longer nights, it is a time for comfort and cozy inspiration. A time to indulge in love and quiet moments and nourishment. It is Mother Nature’s way of reminding us to slow down, savor the little things and to luxuriate in the richness of the season. There is so much beauty to be found in this chapter of the year and endless small joys to take pleasure in - the sight of a table laden with a thoughtful holiday feast, small hands warmed on mugs of steaming hot chocolate and the toasty glow emanating from crackling fireplaces and candlelit evenings. It is, without a doubt, my favorite time of year.

A Festive Appetizer for the Holidays
Artichoke with an Herby Crème Fraîche Dip and ROE Caviar
14 ounces crème fraîche
2 tablespoon minced shallots
2-3 roasted garlic cloves mashed into a paste
zest of one lemon
4 tablespoons melted butter that has been cooled to nearly room temp
2 tablespoons minced fresh dill
2 tablespoons minced fresh chives
1 tablespoon finely chopped fresh mint leaves
1/2 tsp kosher sea salt, add more or to taste
50g ROE Caviar
Combine herbs, garlic and butter. Add the crème fraîche and whip until combined and top with caviar.
